Every holiday I am super excited to eat all the food that comes with the season. However, since I am gluten free I tend to leave most events with an upset stomach. The same goes for Danielle who is gluten + dairy free. If you are reading this you may have the same food sensitivities, allergy or know someone who does and want to avoid the stomach ache while still enjoying some good food! Therefore as we gear up for the holiday season we wanted to share with you how to make a dairy + gluten free charcuterie board that anyone can enjoy.
When shopping for supplies we like to break out the categories and make sure we have 5-8 items in each category. Keeping in mind shapes, sizes, texture and color variety.
Once you have purchased all your items it’s time to make your “board”. In our case we purchased enough supplies to cover a full kitchen island. Since we don’t have an actual board that big we choose to use parchment paper and simply use tape to attach to the surface. If you don’t have a kitchen island you can use a table, bar or countertop.
Depending on what your supplies include you may be able to get away with no serving dishes. However, since we have a mix of spreads and items that need a bowl we had to pull out the serving dishes. We wanted the ingredients to do the talking so we kept all of our serving dishes simple by using a mix of small glass bowls and cups. Don’t forget you will need utensils for serving and cutting as well!
Now onto the fun stuff – the food! We made sure to select a variety of meats in different shapes, sizes and texture. For example we used salami sticks and salami slices for consumers to mix and match depending on what they are pairing them with. We also made sure to cut a few slices if any meat was in a log form for easy grabbing and paired it with a knife.
For cheese we decided to use a mix of dairy, goat, sheeps and vegan cheese so anyone could enjoy the cheese on the board. We made sure to place each category of cheese separately and write their names so there would be no confusion! Again, we used the same thought process as we did for the meat – variety of shapes, sizes and textures! Be sure to check out our favorite vegan cheeses since we know those aren’t as easy to find.
There have been more and more gluten free cracker options popping up which we are SO excited about. If you are gluten free you know that can be a challenge and can be very frustrating. We are here for you! By now I’m sure you are noticing a trend but I’ll say it anyway. Shape, size and texture when selecting what to buy! That is key to helping create variety in your board for ultimate pairing and beauty.
This section of food items you can really tailor to what your palette likes. It’s also your opportunity to add more color variations and personality. We choose a few different easy to eat fruits, olives, spreads and vegan chocolate. After we laid out the main ingredients we layered in the below items based on where we thought they would pair nicely and look best! Common now, we are designers after all – it’s got to look pretty!
Now that all the editable ingredients are laid on the board it’s time for the final touches. We chose to layer in some rosemary, flowers and eucalyptus. Then we added a few bottles of wine that would pair well with the cheese and meats.
Pro Tip: Use the greenery as a border or to fill in the gaps.
Now that you have completed this work of art you can take a step back and give yourself a pat on the back. You are now ready to dive in knowing you wont have a belly ache because of what you ate… it will be because of how much you ate! Enjoy!
